I have been reading “Lunch in Paris a story with recipe” by Elizabeth Bard. And I have been enjoying the book and dreaming about all the wonderful dishes that I would be making in the future. If you see a copy of my book, it’s full of bookmarks. :-) The author gives you a recipe or two at the end of each chapter. As I got into the book on page 28 the author had a recipe for “Individual molten Chocolate cake” I love how she had some many cool tips on each of her recipes and she made it look easy. I wanted to see if it's as easy as she made it sound to make it at home. once a year or two I like treating myself to a lava cake with ice cream, caramel and fudge on top. I halved the recipe because I just want to make enough for two. 2.5 oz chocolate, 1 tablespoon, 2 tablespoon of sugar, half stick of unsalted butter, 1 egg and 1 egg York. one of the tips in the book is to use foil cupcake cups for easy unmolding.
I melted the butter and chocolate together on a double boiler or you can do it in the microwave. I like the double boiler method.
On a mixing bowl I beat together the egg, yolk, and sugar with a whisk until light and slightly foamy.
I add egg mixture to the warm chocolate. whisk it quickly to combine. Then I added flour just to combine. The batter will be quite thick.
I used my cupcake molds or you can use any regular molds that you have but generously butter them up.
I placed them on a preheated Oven of 450 degrees for 8 minutes. Baking time will depend on your oven. Tip number two from the book, for a thinner outer shell bake them for 5 to 7 minute, 8 minutes for a slightly thicker crust and a gooey heart
I topped the finished product with some delicious Mexican vanilla ice cream from Amy's Ice cream.
For my first time trying this recipe, I'm very happy with the results. Next time I would use 50% cacao chocolate instead of 72% cacao chocolate. I'm more of a milk chocolate than dark. it was to dark for me. I would also maybe bake it for 5 to 7 minutes to get more of the lava in the middle.
