. This recipe was great! I will be making this dish again and again in the future.This is one of those recipe as time goes by you will be able to adapt it to fit your family's taste buds. I have been wanting an easy recipe for barbacoa and I believe this is it. What make this recipe great for me is : it's low in sodium, simple ingredients, it's is a slow cooker recipes (This recipe will be done by the time you get off work), the leftovers are great and the flavors in this dish are amazing!! before put on rub on the meat, I trimmed some excess fat on the meat. then I grilled the beef on each side for 3 minutes on my cast iron grilling pan. then I placed the grilled meat in the slow cooker to cook.
Note:
I added a 1 teaspoon of sea salt on my rub( not part of the recipe).
while my meat was cooking, I started on the sauce. Sauteed my diced onion and olive oil on a medium pan for 3 minutes. after that I add 3 clovers of garlic (I love my garlic) to cook for a 1 minute with the onions. I added chicken stock that is what I had on hand instead of beef stock. Added some tomato paste and 3 tablespoon of
which I found at my local Sprouts. I couldn't find (minced chipotle or ground chipotle).
Note:
I added some sea salt to taste ( this wasn't part of the recipe). brought the sauce to a boil and I left it to simmer for 5 minutes till it has thickened.
Poured the sauce on top of the meat and let it cook for 8 hour on low.
8 hours later. I had to drain some of the oil that was on top of the meat sauce.
I Shred the beef with two forks as recommended on the recipe. then pour the cooked meat sauce on top of the meat.
Time to eat:
I ate my meat with rice and some homemade pico de gallo and slices of avocado.
I made tacos with my leftovers.
