Recipe of the week:
Lomo Saltdado (Peruvian Stir-Fry)
The moment I saw this recipe my mouth was watering and my taste buds were dancing for joy. This recipe is so easy and delicious. I didn't have all the ingragents but it didn't stop me from trying to cook this recipe. I adopt it to fit what I like and what I had in my kitchen. For the original recipe please checkout out
Lomo Saltdado (Peruvian Stir-Fry)
.
This is how it turn out.
Tomato, Tomato Paste, Salt & Pepper, Chili Powder or Fresh Chili, Bell Pepper (optional), Garlic, Ginger, Red Onion, and Stir-Fry meat.
Roasted my onions on olive oil for a minute. Tip: cut your onions a little thick, mine were to thin.
Took my onions out and placed the meat on the same pan and roasted it with garlic, ginger, salt, pepper for 3 minutes. The meat is going to cook very fast.
Added the onions back and a whole peeled tomato (in the original recipe she doesn't peel the tomato). I'm not a fan of cooked tomato skin. Let it cook for a minute or two.
After the minute is up I added one tablespoon of tomato paste, half a cube of chicken bouillon with ( I didn't have any broth). I skip the soy sauce, I want to make this the recipe a little healthy.
I didn't have parsley, but I had a Bell Pepper so in it went. if you are not a fan of bell pepper skip this step.
cook for two minutes, I like my bell pepper chunky. The sad thing is I didn't buy or have any french fries at the time. next time I make this recipe I will make sure I have some homemade french fries.
Served my stir-fry on a bed of jasmine rice. This recipe will be my got to recipe it's quick, easy and delicious. Happy Weekend!
