Quick meal
Today is one of those days that I don't feel like cooking but I need to eat something. I'm always looking for easy or quick meals to fix. This is one of my favorite go to recipes. it's easy and I always add to it what I have on hand. Preheat your oven to 400 degrees.
while back I bought those mini sweet peppers that I was going to makes something cool with it, but that never happened. before the peppers went to waste I thought I should use them today. For this recipe I love to use regular red,yellow, orange and green peppers ( I find them to have more flavor than the mini ones). What I love about this recipe everything is in one pan. on a baking pan I placed freshly washed and cute peppers into the pan.
added a whole yellow onion that is what I had on hand. Red onions would have been better. If you have some fresh tomatoes or table to two tablespoons of tomato paste you can add it to give the dish some color and taste.
Added about two chicken breast, cut into 1" cubes. For a vegetarian dish just take the chicken out.
You can add any spices that you like. I added black pepper & salt to taste, about a teaspoon of cumin, Chili powder or fresh chilies, 3 garlic clover, a little turmeric to add color, 2 tablespoon of lemon juice or some apple cider vinegar. it's not a must but a tablespoon or two of olive oil will be great too.
Mix all the ingredients together. You can let it set in the fridge for about an hour to let all the ingredients marinate together or if you are short on time just put it straight into the oven. let it bake for 20 minutes and no more than 30 minutes.
Get your dish out of the oven and you can serve it with rice or other side dishes you might have. it tastes even better the next day.
