Easy Dinner
I'm all for easy delicious meals. I found this really easy dinner recipe on food tube. Food Tube is one of my favorite channels on YouTube and my new addiction. I can sit for hours and watch Jamie Oliver and his guest cook. All the recipes are doable and looks mouthwatering. One of the first recipe I want to to try is this Piri piri Chicken. Here are my results. It's recommended to get two halves of a chicken, I only got half the chicken which will feed or serve two people with sides.
on a small mixing bowl combine: 2 teaspoon of Smoke paprika, 2 teaspoon fresh or dry thyme, generates amount of salt and some black pepper, 2 Tablespoon of olive oil or your favorite oil and a dash of vinegar ( I used white vinegar).
Cover the chicken with the mixture, making sure to cover the whole chicken with the marinade and don't forget under the skin as well.
Make sure to marinade for at least 6 to 8 hours in the fridge. Next time I would do it overnight.
After the 8 hours are up I brought the chicken out of the fridge. I preheated my cast iron grill pan on top of my stove top on medium high heat ( to hot it will burn the chicken). Once the pan is hot I placed the chicken on the grill skin side down and let it cook for 10 minutes on both sides. Note: Do not add any oil to the cast iron pan.
After 10 minutes I turn my chicken on the other side to cook for ten minutes as well. I also preheat the over to 350 degree. While my chicken is cooking, I chopped and cut some sweet potatoes into french fries shape and season it with some smoke paprika, salt, oil, and black pepper.
To finish cooking my chicken I place it in the preheat over while is still in the cast iron pan to cook for 30 minutes and also sprinkle some addition sea salt on top of the chicken. I place the sweat potatoes fries in the oven to cook for 35 minutes as well.
Finished Meal.
The chicken came out just beautifully and juicy as well.
Final thoughts: I would make this recipe again but I will marinate the chicken overnight and use other marinates as well to have more varieties next time.
